This Cowboy Stew has quickly become one of our favorite cozy meals for the fall and winter months. It’s hearty, warm, and full of flavor—everything you want when the weather gets chilly and you’re looking for something comforting to serve your family. The best part is how simple it is to make. I can toss it together on a busy day and know I’m still giving my family something nourishing and wholesome.
All of my kids love this meal (which is always a win!) and I love that it’s packed with protein and veggies, making it both filling and healthy. It also reheats beautifully, so I often make a big batch to have on hand for lunches or a busy weeknight. It’s the kind of meal that feels like gathering around the table—simple, warm, and made with love.
I hope your family enjoys it as much as ours does!

Heather, could this cowboy stew recipe be made in a crockpot instead? If so, what differences would you suggest?
