I’ve been tweaking this recipe for years, and I finally feel like it’s perfected! It’s one of those meals my whole family gets excited about—so full of flavor, comforting, and absolutely delicious. We love serving it over warm white rice, and it always disappears fast at our dinner table.

Coconut Curry Chicken

Ingredients
- 6 Chicken breast
- 1 onion
- 3 tbsp olive oil or coconut oil
- 3 cloves garlic
- 2 tsp salt
- 1 tsp pepper
- 4 Tbsp curry powder
- 2 Tbsp Red Curry Paste I use Thai Kitchen
- 3 can coconut milk
- 1 can crushed tomatoes
- 3 tbsp sugar
- 1 container chopped spinach
- 1 bunch chopped cilantro
Instructions
- Bake chicken at 425 for 25-30 mins until it is 165
- while that is baking make the sauce (and cook the white rice)
- chop onion and garlic and cook for 5 mins in oil
- add red curry paste and stir
- add salt, pepper and curry powder and stir
- add 3 cans of coconut milk and stir
- add tomato sauce, sugar and stir
- chop spinach and cilantro add to the sauce
- put on low until chicken is done then cut up chicken put in the pan and serve over rice! SO good!
