Chicken breast

onion

olive oil or coconut oil

cloves
garlic

salt

pepper

curry powder

Red Curry Paste

coconut milk

can
crushed tomatoes

tbsp
sugar

chopped spinach

chopped cilantro
Instructions
Bake chicken at 425 for 25-30 mins until it is 165
while that is baking make the sauce (and cook the white rice)
chop onion and garlic and cook for 5 mins in oil
add red curry paste and stir
add salt, pepper and curry powder and stir
add 3 cans of coconut milk and stir
add tomato sauce, sugar and stir
chop spinach and cilantro add to the sauce
put on low until chicken is done then cut up chicken put in the pan and serve over rice! SO good!
