Chicken Coconut Curry

I’ve been tweaking this recipe for years and I think I have perfected it!  My family loves this meal, it has so much flavor and is delicious!  I put it over white rice.  I share my recipe at the end of the video below.  I hope your family loves this dish as much as we do!

Coconut Curry Chicken

Ingredients
  

  • 6 Chicken breast
  • 1 onion
  • 3 tbsp olive oil or coconut oil
  • 3 cloves garlic
  • 2 tsp salt
  • 1 tsp pepper
  • 4 Tbsp curry powder
  • 2 Tbsp Red Curry Paste I use Thai Kitchen
  • 3 can coconut milk
  • 1 can crushed tomatoes
  • 3 tbsp sugar
  • 1 container chopped spinach
  • 1 bunch chopped cilantro

Instructions
 

  • Bake chicken at 425 for 25-30 mins until it is 165
  • while that is baking make the sauce (and cook the white rice)
  • chop onion and garlic and cook for 5 mins in oil
  • add red curry paste and stir
  • add salt, pepper and curry powder and stir
  • add 3 cans of coconut milk and stir
  • add tomato sauce, sugar and stir
  • chop spinach and cilantro add to the sauce
  • put on low until chicken is done then cut up chicken put in the pan and serve over rice! SO good!
